Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and sauté for 3–4 minutes until soft.
  • Stir in minced garlic and grated ginger, cooking for 30 seconds until fragrant.
  • Add chicken pieces and cook for 5–6 minutes until lightly browned.
  • Mix in chopped red bell pepper and cubed sweet potato.
  • Pour in diced tomatoes and chicken broth, bringing to a gentle boil.
  • Reduce heat and stir in peanut butter, mixing until creamy.
  • Add spices: ground cumin, smoked paprika, coriander, cayenne, salt, and black pepper.
  • Simmer uncovered for about 20–25 minutes until sweet potatoes are tender.
  • Fold in fresh spinach and wilt for about 2–3 minutes.
  • Finish with a splash of lime juice and adjust seasoning.
  • Garnish with chopped cilantro before serving.

Notes

Use natural peanut butter for best flavor. Taste and adjust seasoning as needed.
