Ingredients
  

Chicken and Marinade

  • 2 lbs bone-in, skinless chicken (thighs and drumsticks), cleaned and trimmed Ideal for making the dish juicy and rich.

  • 1 teaspoon allspice Adds a warm, slightly sweet note.
  • 1 teaspoon dried thyme Provides an earthy undertone.
  • 1 teaspoon paprika Contributes a subtle smokiness.
  • 1/2 teaspoon ground black pepper Adds heat without overpowering.
  • 1 teaspoon salt Essential for amplifying flavors.
  • 2 tablespoons vegetable oil Used for sautéing and browning the chicken.

Vegetables and Aromatics

  • 1 medium onion, chopped Adds sweetness and depth.
  • 3 cloves garlic, minced Infuses the dish with robust flavor.
  • 1 tablespoon fresh ginger, grated Adds a zesty kick.
  • 1 whole Scotch bonnet pepper (optional) Brings distinctive heat that can be adjusted.

Cooking Liquid

  • 2 cups chicken broth Forms the base of the sauce.

Instructions
 

Preparation

  • In a large bowl, season the chicken with Jamaican curry powder, allspice, dried thyme, paprika, black pepper, and salt. Massage the mixture into the chicken, allowing for good infusion of flavors.
  • If possible, marinate the chicken for at least 1 hour, or up to overnight for the best flavor.

Cooking

  • Heat vegetable oil in a large heavy-bottomed pot over medium heat. Add 1 tablespoon of curry powder to the hot oil and 'burn' it for about 30 seconds until aromatic.
  • Add the seasoned chicken pieces to the pot and brown them on all sides for about 5 to 7 minutes.
  • Stir in the chopped onions, minced garlic, sliced scallions, and grated ginger, and sauté until the onion is soft and fragrant.
  • Fold in the chunks of potatoes and sliced carrots, combining them well with the chicken.
  • Add chicken broth, soy sauce, and browning sauce (if using). Toss in the whole Scotch bonnet pepper.
  • Bring to a boil, then reduce heat to low, covering the pot to simmer for 30 to 40 minutes, allowing the chicken to become tender and the sauce to thicken.
  • Before serving, check for tenderness and remove the Scotch bonnet pepper unless you desire extra heat.

Notes

Serve hot over fluffy white rice or with rice and peas. Great for family gatherings, potlucks, or cozy dinners.
