Wet Ingredients

  • 2 3/4 cups warm water Warm water is crucial for activating the yeast (about 100 F).
  • 3 tablespoons unsalted butter Adds richness and buttery flavor.
  • 3 tablespoons honey Gives baghrir the comforting sweetness.

Instructions
 

Preparation

  • Add the fine semolina, all-purpose flour, yeast, baking powder, sugar, salt, and warm water to a blender. Blend for about one minute until smooth and lightly foamy.
  • Pour the batter into a bowl and cover loosely with a kitchen towel. Allow to rest in a warm spot for 20-30 minutes.

Cooking

  • Warm a nonstick skillet over medium heat and reduce to medium-low. Do not add oil or butter to the pan.
  • Pour 1/4 cup of batter into the pan. Cook for about 1-2 minutes until the top is dry and covered with holes. Do not flip the pancake.
  • Transfer the cooked baghrir to a clean kitchen towel to cool slightly before stacking. Repeat with remaining batter.
  • Melt the unsalted butter and honey together until fluid. Drizzle over warm baghrir just before serving.

Serve with Moroccan mint tea and various toppings like fruit preserves, fresh fruits, or chopped nuts. Baghrir symbolizes warmth and hospitality, perfect for gatherings.
