Ingredients
  

Apple Filling

  • 3 medium firm apples, peeled, cored, and diced small Choose apples that are crisp and slightly tart for the best flavor.

  • 1 teaspoon ground cinnamon Provides warm aroma and comfort.

  • 1/8 teaspoon fine salt Elevates all the sweet notes.
  • 1 tablespoon cornstarch mixed with 1 tablespoon cold water Thickens the filling.

Roll Assembly

  • 10 pieces round rice paper wrappers, 8-inch size Provides a light and crispy shell.
  • 2 tablespoons neutral oil (such as avocado or canola) For brushing on the rice paper before baking.
  • 1 tablespoon powdered sugar Optional for serving.

Instructions
 

Cooking the Filling

  • In a skillet over medium heat, add diced apples, light brown sugar, ground cinnamon, lemon juice, and fine salt. Cook for 5-6 minutes, stirring often, until apples soften but hold their shape.
  • Stir in the cornstarch slurry and cook for an additional 30-60 seconds until the juices turn glossy and thick. Remove from heat and transfer to a bowl. Allow to cool for at least 10 minutes.

Preparing the Rolls

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly brush with oil.
  • Prepare a shallow plate of warm water. Dip one rice paper wrapper into the water for 5-8 seconds until bendable, then place it on a damp cutting board.
  • Spoon about 2 tablespoons of apple filling near the lower third of the wrapper. Fold the bottom over the filling, fold in both sides, and roll snugly. Place seam side down on the baking sheet.
  • Brush the tops lightly with oil and bake for 10 minutes. Carefully flip and bake an additional 8-10 minutes until edges are crisp and filling is hot.

Finishing Touches

  • Allow rolls to cool for 5 minutes before serving. Dust with powdered sugar or drizzle with caramel sauce/maple syrup if desired.

Notes

Ensure that apples are diced uniformly. Do not over-soak rice paper wrappers. Allow filling to cool before wrapping.
