Ingredients
  

Beef and Broth

  • 3 pounds beef chuck roast, cut into large chunks Ideal for slow cooking and deeply flavorful.

Chiles and Spices

  • 1/2 teaspoon ground cinnamon Adds a subtle sweetness.

Vegetables and Misc

  • 1 large white onion, chopped Contributes to the savory sauce base.

Instructions
 

Preparation

  • Heat a dry skillet over medium heat and lightly toast the guajillo, ancho, and árbol chiles for 1–2 minutes until fragrant.
  • Transfer the chiles to a bowl and cover them with hot water. Let them soak for 15 minutes until softened.
  • In a blender, combine softened chiles, onion, garlic, fire-roasted tomatoes, vinegar, oregano, cumin, cinnamon, and 1 cup of beef broth. Blend until smooth.
  • Season the beef chunks generously with salt and pepper.

Cooking

  • Heat a large Dutch oven over medium-high heat and sear the beef on all sides until browned.
  • Pour the blended chile sauce over the beef, add the remaining broth and bay leaves, then bring to a boil.
  • Reduce the heat, cover, and simmer for 2 1/2 to 3 hours until the beef is fork-tender.
  • Remove the beef, shred it with forks, and return to the consomé.
  • Heat a skillet over medium heat. Dip each corn tortilla into the top layer of the consomé, then place on the skillet.
  • Fill with shredded beef and cheese, fold, and cook until crispy on both sides.

Serving

  • Serve hot with chopped cilantro, lime wedges, and a small bowl of consomé for dipping.

Notes

For the best results, do not rush the broth preparation and taste as you go to adjust seasoning.
