  • 1 can (4 oz / 113 g) chopped green chiles for an added kick
  • 1 can (15 oz / 425 g) black beans, drained and rinsed bringing protein and fiber
  • 4 large eggs the star of this dish, creating a comforting creaminess

For finishing touches

  • 1/4 cup (30 g) crumbled cotija cheese for a salty, creamy finish
  • 1 tablespoon chopped fresh cilantro for a burst of freshness
  • 8 pieces warm corn tortillas for serving

Instructions
 

Preparation

  • Preheat your oven to 375°F. Grab an oven-safe 10-inch skillet.
  • Heat the olive oil in the skillet over medium heat. Add chopped onion and garlic, cooking for about 7-9 minutes until softened and lightly golden.
  • Stir in the tomato paste, chili powder, cumin, and salt. Cook for another minute, stirring well.
  • Add the canned diced tomatoes with their juices, chopped green chiles, and black beans to the skillet. Bring to a gentle simmer and cook for 3-5 minutes.

Baking

  • Make 4 shallow wells in the bean mixture. Crack 1 egg into each well and spoon some sauce around the whites, leaving the yolks exposed.
  • Transfer the skillet to the oven and bake for 12-18 minutes, until the whites are fully set and yolks are cooked to your liking.

Finishing touches

  • Remove from oven and sprinkle with cotija cheese and cilantro.
  • Serve hot with warm corn tortillas, lime wedges, and hot sauce if desired.

Notes

For a lighter version, use egg whites or cottage cheese, and increase vegetables like spinach or bell peppers. Ensure to use fresh ingredients for the best taste.
