Preparation

  • Mix the ground chuck, beaten egg, grated Parmesan, plain breadcrumbs, garlic, kosher salt, and ground black pepper in a medium bowl.
  • Shape the mixture into four oblong patties, seasoning the outsides lightly with additional salt and pepper.

Cooking the Patties

  • Heat canola oil in a large cast iron skillet over medium-high heat.
  • Add the patties to the skillet and sear for about three minutes on each side until browned.
  • Transfer patties to a plate and set aside.

Making the Gravy

  • In the same skillet, add quartered mushrooms and sliced onions, cooking for about 4-5 minutes until softened.
  • Stir in the tomato paste and Worcestershire sauce, cooking for an additional 30 seconds.
  • Pour in the beef broth, scraping the browned bits from the pan, and let simmer for 3-4 minutes.
  • Stir in half-and-half and return the patties and their juices to the skillet, simmering gently until the internal temperature reaches 160°F.

Serving

  • Spoon gravy over the patties and garnish with fresh parsley.
  • Serve hot with sides like mashed potatoes, noodles, or rice.
