  • 1 lb beef tips (chuck or sirloin) Ideal for braising, becoming tender and flavorful.
  • 1 tablespoon olive oil Provides a rich base for searing the beef.

  • 4 cloves garlic, minced Infuses the dish with rich flavor.
  • 2 cups beef broth Foundation of the gravy.

Grits

  • 2 cups grits Creamy and comforting base.
  • 4 cups water or chicken broth Use broth for richer taste.
  • 1/2 cup heavy cream Makes the grits luxuriously creamy.
  • 2 tablespoons butter Adds richness.
  • 1/4 cup fresh parsley, finely chopped Used for garnish.

Instructions
 

Preparation

  • Heat olive oil in a large skillet over medium-high heat. Sear the beef tips until browned on all sides, about 5-7 minutes.
  • Remove the beef tips from the skillet and set aside.
  • In the same skillet, add the chopped onion and minced garlic, cooking until soft and fragrant, about 2-3 minutes.
  • Pour in the beef broth, Worcestershire sauce, soy sauce, thyme, rosemary, salt, and pepper. Stir and bring to a gentle simmer.
  • Return the beef tips to the skillet and cover. Reduce heat to low and let simmer for about 1.5 to 2 hours, until beef is tender.

Grits Preparation

  • In a large saucepan, bring the water or chicken broth to a boil.
  • Gradually stir in the grits, mixing continuously to avoid lumps. Reduce heat to low and let cook for about 20-25 minutes, stirring occasionally.
  • Once thickened, stir in heavy cream and butter. Season with salt and pepper to taste.

Serving

  • Spoon creamy grits into bowls and top with braised beef tips and gravy.
  • Garnish with freshly chopped parsley.

Notes

For optimal flavor, do not rush the searing process and be diligent with simmering the beef. Fresh ingredients yield the best results. If desired, you can also mix cheese into the grits for added flavor.
