  • 3 1/3 cups rolled oats Provides the hearty base, giving the flapjacks their trademark chewiness.

Preparation

  • Preheat your oven to 350°F (180°C) and line an 8-inch square baking tin with parchment paper.
  • In a large saucepan, combine the unsalted butter, light brown sugar, golden syrup, and fine salt. Warm over low heat, stirring until melted and smooth.
  • Remove from heat, stir in the optional vanilla extract, and mix in the rolled oats until thoroughly coated.
  • Scrape the oat mixture into the prepared tin, pressing firmly into an even layer.

Baking

  • Bake for 18-22 minutes, until the edges are golden and the center is slightly soft.
  • Allow to cool in the tin for 10 minutes, then score into 16 bars while still warm.
  • Cool completely in the tin before lifting out and slicing through the scores.

Notes

Useful tips: Use unsalted butter for better control of seasoning, pack oats firmly for even baking, and watch the baking time closely.
