Finishing Ingredients

  • 1 large egg beaten with 1 tablespoon milk, for egg wash Gives the buns a golden hue.

Preparation

  • Stir the warm milk, yeast, and 1 tablespoon of the sugar together in a large bowl. Let stand for 5-10 minutes, until foamy on top.
  • Add the remaining sugar, egg, softened butter, 3 cups of flour, salt, and vanilla (if using). Mix until a shaggy dough forms, then knead for 6-8 minutes until smooth and elastic.
  • Place the dough in a lightly greased bowl, cover, and let rise in a warm place for 60-90 minutes, until doubled.

Shaping & Baking

  • Turn the dough onto a lightly floured surface and divide it into 12 equal pieces. Pinch a small marble-sized piece from each portion for the tail.
  • Roll each larger piece into a 12-inch rope, bend it into a U shape, and twist the top twice, leaving the tips pointing up for ears. Roll the small piece into a ball for the tail.
  • Arrange the shaped buns on parchment-lined baking sheets. Cover loosely and let rise for 25-35 minutes, until puffy.
  • Preheat the oven to 375°F. Brush the buns with egg wash and sprinkle with coarse sugar if using. Bake for 15-18 minutes, until golden brown.

Finishing Touches

  • Stir the melted butter and honey together. Once the buns are out of the oven, brush over the warm buns and let them cool for at least 10 minutes before serving.
