Preparation

  • Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan.
  • In a large mixing bowl, combine the granulated sugar and vegetable oil.
  • Add the eggs and whisk until well combined and smooth.
  • In a separate bowl, mix together the flour, baking powder, baking soda, salt, and cinnamon.
  • Gradually add the dry ingredients to the wet mixture, folding in gently.
  • Incorporate the grated carrots and drained crushed pineapple.
  • Pour the carrot cake batter into the prepared springform pan.
  • In another bowl, blend the cream cheese, sour cream, and vanilla extract until creamy.
  • Pour the creamy mixture over the carrot cake batter.

Baking

  • Bake for approximately 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cheesecake to cool on a wire rack for a bit before refrigerating for at least four hours, or overnight.

Notes
