  • 4 pieces bell peppers (red, green, or yellow) Choose fresh, firm peppers.
  • 1 lb ground beef Rich and savory for depth.
  • 1/2 cup cooked rice Acts as a filler.
  • 1/2 cup onion, diced Adds necessary flavor.
  • 1 cup canned corn, drained For sweetness and texture.
  • 1/2 cup diced tomatoes (optional) For acidity and moisture.
  • 1 cup shredded mozzarella or cheddar cheese For a cheesy topping.
  • 1 tbsp tomato paste Amplifies tomato flavor.
  • 1 tsp garlic powder Adds aroma.
  • 1 tsp onion powder Enhances onion flavor.
  • 1/2 tsp Italian seasoning Introduces aromatic herbs.
  • to taste salt & black pepper Essential for flavor balance.
  • 1 tbsp olive oil For roasting the peppers.

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C). Cut bell peppers in half lengthwise and remove seeds.
  • Drizzle the peppers with olive oil and bake for about 10 minutes.
  • In a skillet, cook ground beef and diced onion. Add seasoning, including garlic powder, onion powder, salt, black pepper, and Italian seasoning. Cook until browned.
  • Stir in tomato paste, corn, cooked rice, and optional diced tomatoes; mix thoroughly.

Assembly

  • Fill pre-baked pepper halves with the beef mixture, packing generously and sprinkle cheese on top.

Cooking

  • Return stuffed peppers to the oven and bake for an additional 15-20 minutes until cheese is bubbly and golden.

Notes

Serve hot with a fresh side salad or garlic bread. Store leftovers in an airtight container for up to three days.
