Coating Ingredients

  • 1 1/2 cups crushed cornflakes or panko For creating a crispy, golden shell.
  • 1/2 cup all-purpose flour Acts as a base for the coating.
  • 2 pieces eggs, beaten Helps the coating adhere.
  • Oil for frying Ensures crispy texture.

  • Sour cream or ranch drizzle For a creamy finish.

Instructions
 

Preparation

  • In a large bowl, combine the finely chopped lobster meat, drained sweet corn, shredded cheddar cheese, softened cream cheese, garlic powder, salt, and black pepper. Mix until well blended.
  • Take a scoop of the mixture and roll it into golf ball-sized rounds. Place the balls on a tray and chill them in the fridge for 20 to 30 minutes.

Coating and Frying

  • Prepare your coating station by placing flour, beaten eggs, and crushed cornflakes or panko in three separate bowls.
  • Coat each chilled ball in flour, shake off excess, dip in beaten egg, and roll in crushed cornflakes or panko.
  • Heat oil in a large pot or deep fryer to 350°F (175°C). Fry the balls in batches for 3 to 4 minutes until crispy and golden brown.
  • Once fried, place the balls on paper towels to drain excess oil.

Serving

  • Drizzle with sour cream or ranch and sprinkle with fresh chopped chives. Serve hot and enjoy!

Notes

For best results, use high-quality ingredients and pay attention to the frying temperature. You can bake instead of fry for a healthier alternative.
