Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  • In a mixing bowl, combine the flour, powdered sugar, and chilled, cubed butter. Cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  • Press this mixture evenly into the bottom of your prepared pan. Bake for 12–15 minutes, or until the edges are lightly golden. Let it cool slightly.
  • In a separate bowl, beat together the softened cream cheese, granulated sugar, egg, and vanilla extract until smooth and creamy.
  • Spread the cream cheese mixture over the cooled crust.
  • Spoon the cherry pie filling over the cream layer, spreading evenly.

Baking

  • Return to the oven and bake for another 20–25 minutes, or until the filling is set.
  • Let the squares cool completely and sprinkle with chopped pistachios before serving.
  • For the best results, chill for at least 2 hours before cutting.
