Preparation

  • In a large bowl, combine the flour, sugar, and salt. Cut in the chilled butter until the mixture resembles coarse crumbs.
  • Dissolve the yeast in the cold water and add it to the flour mixture. Stir until a dough forms.
  • Knead the dough on a floured surface for about 5 minutes, then wrap it in plastic wrap and refrigerate for 30 minutes.
  • Roll out the dough into a rectangle, fold it in thirds like a letter, rotate 90 degrees, and roll out again. Repeat this process 3 times.
  • Roll the dough one last time into a larger rectangle and cut it into triangles.

Assembly and Baking

  • Place a few chocolate chips at the base of each triangle and roll them up toward the point.
  • Place the rolled croissants on a baking sheet lined with parchment paper, brush them with the beaten egg, and let them rise for 20-30 minutes.
  • Preheat the oven to 375°F (190°C) and bake the croissants for 15-20 minutes, or until they are golden brown.
  • Let them cool slightly before serving and enjoying.

Notes
