  • 2 1/2 lb Yukon Gold potatoes, peeled and cut into 1 1/2-inch chunks Choose for their natural creaminess and flavor.
  • 1 tablespoon kosher salt To enhance the natural taste of the potatoes.
  • 4 tablespoons unsalted butter, cubed Contributes richness and creaminess.
  • 1/4 cup heavy cream, warmed To add smoothness and depth.
  • 1/2 cup finely grated Parmesan cheese Imparts a nutty flavor.
  • 3 large egg yolks Will bind the mixture and create a glossy finish.
  • 3/4 teaspoon fine salt For seasoning, plus more to taste.
  • 1/4 teaspoon black pepper For a gentle kick.
  • 1/8 teaspoon ground nutmeg To add warmth and aromatic qualities.
  • 2 tablespoons unsalted butter, melted For brushing.
  • 1 tablespoon finely chopped fresh chives To garnish with a pop of color and freshness.

Instructions
 

Preparation

  • Place the potatoes in a large pot and cover them with cold water by about an inch.
  • Add the kosher salt to the water and bring it to a boil over medium-high heat.
  • Once boiling, reduce the heat to a simmer and let the potatoes cook for 15-18 minutes until they are very tender.
  • Drain the potatoes well in a colander and return them to the warm pot on the stove over low heat for about a minute.
  • Shake the pot gently to let the steam escape, which helps dry out the potatoes.
  • Pass the hot potatoes through a ricer into a bowl or mash them thoroughly with a potato masher.
  • Stir in the cubed unsalted butter, warm cream, Parmesan cheese, fine salt, pepper, and nutmeg until well incorporated.
  • Allow the mixture to cool for 3-5 minutes.
  • Beat in the egg yolks until the potatoes are smooth, thick, and glossy.

Baking

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • Transfer the potato mixture into a piping bag fitted with a large star tip and pipe 12 mounds onto the prepared baking sheet.
  • Lightly brush the tops of the mounds with melted butter.
  • Bake for 18-22 minutes until the ridges are golden brown and the centers are heated through.
  • Just before serving, sprinkle chopped fresh chives over the top.

Notes

Classic Duchess Potatoes pair beautifully with holiday roasts, grilled meats, or rich mushroom sauce. They can be prepared ahead, up to the baking stage, and stored in the refrigerator.
