  • In a large bowl, beat the softened butter until creamy, then add the egg, orange juice, orange zest, and vanilla extract, mixing thoroughly.
  • Gradually introduce the dry mixture to the wet mixture, stirring gently until just combined, then fold in the chopped cranberries.

Baking

  • Pour the batter into the prepared loaf pan, smoothing the top, and bake for 50-60 minutes until a toothpick inserted into the center comes out clean.
