Preparation

  • Heat the olive oil in a large skillet over medium heat.
  • Add the chicken sausages and sear them until they are golden brown on all sides, about 5-7 minutes.
  • Add the minced garlic and cook for about 1 minute until fragrant.
  • Gently stir in the fresh spinach until wilted, which should take just a couple of minutes.
  • Pour in the heavy cream while stirring gently to combine, then add grated Parmesan cheese and smoked paprika, and season with salt and pepper to taste.
  • Stir until the mixture is well mixed and the cheese is melted.
  • Introduce the drained cannellini beans to the skillet and let the mixture simmer for 5-7 minutes.
  • Finally, return the sausages to the pan, spooning the sauce over them. Garnish with fresh thyme if desired.
  • Serve immediately with warm, crusty bread.

Notes

To lighten the recipe, substitute some heavy cream with chicken broth. Use high-quality sausages and fresh spinach for best flavor. Don’t rush the searing process; it enhances the taste.
