Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onion and minced garlic, cooking until fragrant and tender, about 3-4 minutes.
  • Toss in the chopped roasted poblano peppers, stirring them in with the onions and garlic.

Cooking

  • Stir in the shredded chicken, black beans, corn, diced tomatoes with green chiles, and all the seasonings.
  • Pour in the chicken broth and bring the mixture to a gentle boil.
  • Reduce the heat, let the soup simmer uncovered for 15-20 minutes, stirring occasionally.
  • After simmering, stir in the heavy cream and cheddar cheese, allowing them to melt.
  • Simmer for an additional 5 minutes until everything is beautifully combined.
  • Squeeze in lime juice, ladle the soup into bowls, and top with additional cheese, cilantro, sour cream, and lime wedges.

Notes

Roasting poblanos enhances their flavor, use leftover chicken for speed, taste and adjust seasoning as needed.
