Main Ingredients

  • 1 lb beef sirloin, sliced Tender chunks of beef that offer an incredible depth of flavor.
  • 2 tablespoons olive oil Adds a rich, fruity flavor and ensures the beef is seared to perfection.
  • 3 cloves garlic, minced The aromatic essence elevates the dish with its pungent sweetness.
  • 1 package fresh spinach (about 4 cups) The vibrant green adds color and a nutritional boost.
  • 1 lb cheese tortellini (store-bought or homemade) These delightful pasta parcels bring creaminess and a satisfying bite.
  • 1/2 cup unsalted butter Essential for that luxurious, creamy sauce.
  • 1 cup heavy cream Adds incredible richness and makes the sauce velvety.
  • 1/2 cup grated Parmesan cheese Adds a sharp, nutty flavor that elevates the creaminess.
  • Salt and pepper, to taste Simple but essential for bringing all the flavors together.
  • Fresh parsley, chopped, for garnish A splash of freshness that enhances presentation.

Instructions

Cooking the Beef

  • In a large skillet, heat the olive oil over medium-high heat. Add the sliced beef and cook until browned, about 5-6 minutes. Remove the beef from the skillet and set it aside.

Making the Sauce

  • In the same skillet, melt the butter and add the minced garlic. Stir for 1-2 minutes until fragrant and golden.
  • Add the fresh spinach and wilt down for about 2-3 minutes.
  • Pour in the heavy cream and add the Parmesan cheese. Let it simmer gently for about 3-4 minutes, stirring occasionally until the sauce thickens.

Combining Ingredients

  • Prepare the cheese tortellini according to package directions, then drain and add to the skillet with the sauce. Return the cooked beef to the pan and toss everything together until well-coated in the sauce.
  • Season with salt and pepper to taste, and finish with parsley for garnish.

Notes

Taste the sauce before serving to balance the seasoning. For a lighter option, consider using half and half instead of heavy cream. Always use freshly grated cheese for the best flavor.
