Preparation

  • In a large pot, heat the olive oil over medium heat. Add the finely chopped onion, which softens and turns translucent in about 5 minutes.
  • Introduce minced garlic, grated ginger, turmeric, cumin, and curry powder to the pot. Stir this aromatic mixture for about one minute.
  • Toss in the cubed potatoes and drained chickpeas, ensuring everything is well-coated.
  • Add the coconut milk and tomato paste to the pot. Stir vigorously until fully combined and bring to a gentle simmer.
  • Simmer for 20-25 minutes, or until the potatoes are tender.
  • Season with salt and pepper to taste, stir gently, and garnish with fresh cilantro before serving.

Notes

For best results, use fresh ingredients, allow it to simmer for the flavors to meld, and garnish generously with cilantro. Can be served with basmati rice or cucumber raita.
