  • 1 cup beef consommé
  • 1/2 cup soy sauce Can substitute with low-sodium soy sauce.
  • 1/3 cup brown sugar Can substitute with low-calorie sweetener.
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 2 tablespoons cornstarch
  • 2 tablespoons cooled sauce from the crock pot after being cooked
  • as many as desired fresh broccoli florets Adds color and nutrition.

Preparation

  • Place beef in a crock pot, slicing it into thin strips for even cooking.
  • In a small bowl, combine consommé, soy sauce, brown sugar, sesame oil, and garlic. Whisk until combined.

Cooking

  • Pour the sauce over the beef and cook on low for 6-8 hours.
  • In a cup, stir cornstarch and cooled sauce until smooth, then add to the crock pot. Stir well.
  • Add broccoli to the crock pot and stir to combine.
  • Cover and cook an additional 30 minutes on high to thicken the sauce.
  • Serve over hot cooked rice, ladling the beef and broccoli with sauce generously.

Notes

For better flavor, allow beef to marinate in soy sauce for at least 30 minutes. Avoid overcooking broccoli. For a healthier alternative, use whole grains like brown rice or quinoa.
