Instructions
 

Preparation

  • Lightly grease a 6-quart slow cooker insert with nonstick spray or a thin coating of oil.
  • Add the diced potatoes, chicken, kielbasa, and onion to the crockpot, then sprinkle in 2 cups of the shredded cheddar cheese and stir gently.
  • In a separate bowl, whisk together the cream of chicken soup, sour cream, heavy cream, Italian seasoning, garlic powder, salt, and pepper until smooth.
  • Pour the sauce mixture over the crockpot contents ensuring everything is well coated, then sprinkle the remaining 1/2 cup of cheddar over the top.

Cooking

  • Cover the slow cooker and set it to low for 6-7 hours or high for 4-5 hours.
  • Monitor the cooking process to ensure the potatoes are tender and the chicken reaches 165°F.
  • Once cooked, turn off the slow cooker and let it rest for 10 minutes before serving. Stir gently, taste for salt and pepper.

Notes

Resist the urge to lift the lid during cooking; every peek adds cooking time. For lighter options, substitute heavy cream with evaporated milk or Greek yogurt.
