Instructions
 

Preparation

  • In a small bowl, stir together the mayonnaise, 1 tablespoon of lime juice, garlic powder, smoked paprika, kosher salt, and black pepper until smooth and creamy.
  • Slice the avocados and toss them with 1 tablespoon of lime juice to prevent browning.

Cooking

  • Heat a skillet over medium heat, add the cooked chicken, and warm it for about one minute.
  • Butter one side of each sourdough slice. Spread the lime mayo on the unbuttered side. Layer with Monterey Jack cheese, warm chicken, sharp cheddar, and avocado slices.
  • Top with another slice of bread, buttered side out, and place it in the hot skillet.
  • Cook for about 3-4 minutes per side until golden brown and cheese is melted. Press down lightly with a spatula while cooking.
  • Let the sandwiches rest for 1-2 minutes before slicing and serve warm.

Notes

Letting the sandwiches rest helps the cheese set, making them easier to slice. For healthier alternatives, consider whole grain bread and Greek yogurt for mayo.
