  • 2 ripe tomatoes, sliced 1/4-inch thick and patted dry Contributing freshness and a burst of juicy sweetness.
  • 12 fresh basil leaves Bringing that aromatic, slightly peppery flavor.
  • 2 tablespoons olive oil, for brushing Adding a golden sheen and crispness to the sandwich.

Instructions
 

Preparation

  • Season the chicken cutlets generously with salt and pepper.
  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  • Carefully place the chicken cutlets in the skilled. Sear for about 3-4 minutes on each side until golden brown and cooked through, reaching an internal temperature of 165°F.
  • Transfer the cooked chicken to a plate and let it rest.
  • Spread a generous layer of basil pesto on one side of each slice of bread.
  • On four slices of pesto-spread bread, layer the cooked chicken, followed by fresh mozzarella slices, and thick tomato slices. Sprinkle with fresh basil leaves and top with remaining bread slices, pesto-side down.
  • Brush the outside of each sandwich with olive oil.

Cooking

  • Place the sandwiches in a preheated panini press and cook for 4-5 minutes until the bread is crisp and the cheese has melted.
  • Let the panini rest for about 1 minute before slicing in half.
  • Serve immediately.

Notes

For successful panini-making, prep ingredients ahead of time. Ensure the chicken is seasoned well and seared to achieve a golden crust. Pat dry your ingredients to prevent a soggy sandwich.
