Preparation

  • Grease a 24-cup mini muffin pan with nonstick spray or melted butter.

  • In another bowl, whisk the buttermilk, egg, melted butter, maple syrup, and vanilla extract until smooth.
  • Pour the wet mixture into the dry ingredients, stirring gently just until combined.
  • Fold in the mini chocolate chips.
  • Divide the batter among the mini muffin cups, filling each about three-quarters full.

Baking

  • Bake for about 9-11 minutes or until lightly golden.
  • Let the poppers rest in the pan for about 3 minutes before removing.

Notes

For healthier alternatives, use whole wheat or almond flour instead of all-purpose flour and substitute granulated sugar with honey or maple syrup. Avoid overmixing the batter to prevent dense poppers.
