Easy Pistachio Tiramisu

A delightful twist on the classic Italian dessert, infused with rich pistachio flavors, creamy mascarpone, and coffee-soaked ladyfingers.

Ingredients
  

Coffee Mixture

  • 1 cup strong brewed coffee or espresso, cooled Filling your kitchen with its rich aroma.
  • 24 pieces ladyfingers (approximately 7 oz / 200 g) Offering a tender base that absorbs the flavors beautifully.

Cream Mixture

  • 16 oz full-fat mascarpone Cool but not icy cold, bringing a creamy and decadent richness.
  • 3/4 cup pistachio cream Adding a sweet nuttiness that elevates the dish.
  • 1/3 cup powdered sugar You can adjust to taste.
  • 1 teaspoon vanilla extract Imparting a warm and inviting hint of flavor.
  • 1/8 teaspoon fine salt Balancing the sweetness.
  • 1 cup cold heavy cream Providing the airy lightness necessary for a perfect consistency.
  • 1 tablespoon unsweetened cocoa powder Adding a subtle bitterness.
  • 1/3 cup chopped roasted pistachios For a delightful crunch.

Instructions
 

Preparation

  • Brew a strong cup of coffee or espresso and allow it to cool to room temperature.
  • Pour the cooled coffee into a shallow dish wide enough for dipping the ladyfingers.
  • In a mixing bowl, beat the mascarpone, pistachio cream, powdered sugar, vanilla extract, and salt on low speed until smooth and creamy. Do not overmix.
  • In a separate bowl, whip the cold heavy cream until soft peaks form.
  • Gently fold the whipped cream into the pistachio mascarpone mixture in two additions.

Assembly

  • Dip half of the ladyfingers into the cooled coffee for about 1 second per side.
  • Arrange the dipped ladyfingers tightly in an 8x8 or 9x9 inch dish.
  • Spread half of the pistachio cream mixture over the top, smoothing it out evenly.
  • Repeat the process with the remaining ladyfingers and layer them over the cream, followed by the remaining pistachio cream.

Chill

  • Cover the dish and refrigerate the tiramisu for at least 6 hours, preferably overnight.

Serving

  • Just before serving, dust the top with unsweetened cocoa powder and sprinkle with chopped roasted pistachios.

Notes

Ensure mascarpone is cool but not icy. Be gentle while folding in whipped cream to maintain a light texture. Taste the pistachio cream and adjust sweetness as needed. Best for gatherings or as a special treat.
