Preparation

  • Begin your pudding by adding the hulled strawberries, almond milk, plain dairy-free yogurt, maple syrup, vanilla extract, fresh lemon juice, and a pinch of salt to your blender. Blend until you achieve a creamy and smooth consistency.
  • Pour your strawberry mixture into a large bowl or jar. Sprinkle in the chia seeds and stir them in thoroughly until evenly distributed throughout the liquid.
  • Allow the mixture to sit for about 15 minutes. This brief pause gives the chia seeds time to absorb the liquid and swell.
  • Cover the bowl or jar and refrigerate the mixture for at least 4 hours, or overnight, to thicken.
  • After chilling, give it one last stir. Spoon the chia seed pudding into individual jars for serving. Top each jar with sliced fresh strawberries and, if desired, toasted coconut or granola.

Choose ripe strawberries for the best flavor, blend thoroughly for a smooth texture, and let it rest for at least 4 hours to achieve the perfect pudding texture.
