  • 1 sheet 1 sheet frozen puff pastry, thawed but still cold This pastry will provide the flaky, airy layers.
  • 1-2 tablespoons 1-2 tablespoons all-purpose flour, for rolling Just enough to prevent sticking.

For the almond filling

  • 6 tablespoons 6 tablespoons unsalted butter, softened Provides creaminess and richness.
  • 1/2 cup 1/2 cup granulated sugar Adds sweetness to balance the nutty flavor.
  • 1 cup 1 cup blanched almond flour Key ingredient for smooth, nutty taste.
  • 1 large 1 large egg Binds ingredients together.
  • 1 tablespoon 1 tablespoon all-purpose flour For creamy texture in the filling.
  • 1 teaspoon 1 teaspoon almond extract Intensifies the almond flavor.
  • 1/4 teaspoon 1/4 teaspoon fine salt Enhances the overall flavors.
  • 1/3 cup 1/3 cup sliced almonds Adds crunch and a nutty finish.
  • 2 tablespoons 2 tablespoons powdered sugar, for dusting For a sweet, decorative finish.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and set a rack in the center position. Gather your 24-cup mini muffin pan nearby.
  • In a bowl, beat the softened butter and granulated sugar together until smooth and creamy, about 1-2 minutes.
  • Gradually mix in the almond flour, large egg, 1 tablespoon of all-purpose flour, almond extract, and salt until well combined.
  • On a lightly floured surface, roll out the cold puff pastry into an 11-inch square and cut it into 24 small squares.
  • Press one pastry square into each muffin cup and fill with about 2 teaspoons of almond filling, topping with sliced almonds.

Baking

  • Bake the croissant bites for 13-16 minutes until the pastry is puffed and golden brown.
  • Allow to cool in the pan for 5 minutes before transferring to a cooling rack. Dust with powdered sugar before serving.

Notes

For best results, use cold pastry and do not overfill the cups. Dust with powdered sugar for an elevated presentation.
