Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C) and grease a muffin tin with olive oil.
  • In a large bowl, whisk the eggs and milk together until well combined.
  • Add the cooked quinoa, crumbled feta cheese, chopped spinach, and chives and stir gently to combine.
  • Season with salt and black pepper.
  • Pour the mixture into the muffin tin, filling each cup about three-quarters full.

Baking

  • Bake in the preheated oven for 15-20 minutes until tops are golden brown and a toothpick comes out clean.
  • Let muffins cool for a few minutes before transferring them from the tin.

Garnishing

  • Garnish with cherry tomato slices and fresh parsley before serving.

Notes
