Preparation of Vanilla Cream Syrup

  • In a medium saucepan, combine the granulated sugar, butter, heavy whipping cream, and a pinch of salt. Cook over medium heat, stirring frequently, until the butter melts and the mixture begins to bubble.
  • Allow it to boil gently for approximately 3-5 minutes, stirring often. Once it reaches a deep, rich consistency, remove it from heat and mix in the vanilla extract and baking soda. Let the foam settle as the syrup cools.

Preparation of Gingerbread Waffles

  • In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, fine salt, ground cinnamon, ground ginger, ground nutmeg, and ground cloves until all ingredients are well-combined and aromatic.
  • In a separate bowl, whisk the egg yolks thoroughly. Add the oil, milk, plain Greek yogurt, and molasses, stirring until smooth. Scrape the bottom of the bowl to ensure the rich molasses blends seamlessly.
  • Beat the egg whites using an electric mixer until stiff peaks form. Gently stir the wet ingredients into the dry mixture, then carefully fold in the whipped egg whites, preserving their volume.
  • Preheat and grease your waffle iron. Scoop the appropriate amount of batter based on your waffle iron's size and cook until the waffles are deep golden brown, crispy at the edges, and fully cooked through, approximately 3-5 minutes per waffle.
