For the Peach Glaze

Preparation

  • In a large mixing bowl, combine the flour, salt, black pepper, and paprika.
  • Coat the prepared chicken pieces in the flour mixture.
  • Dip each piece into the beaten eggs, allowing excess to drip off.
  • Roll the chicken in shredded coconut and panko breadcrumbs.

Cooking

  • Heat vegetable oil in a frying pan over medium heat.
  • Carefully add the coated chicken bites to the hot oil, frying until golden brown and fully cooked, about 5-7 minutes on each side.
  • While the chicken is frying, mix together the diced peaches, peach preserves, soy sauce, honey, rice vinegar, and grated ginger in another saucepan.
  • Simmer the mixture over medium heat until thickened into a sticky glaze, about 5-10 minutes.

Serving

  • Once the chicken bites are cooked, drain them on paper towels.
  • Drizzle the peach glaze over the chicken bites before serving.

Notes

For better results, ensure oil is hot, avoid overcrowding the pan, and prep ahead to streamline cooking. You can also bake the bites for a healthier alternative.
