For the Sandwich

  • 4 slices sourdough bread Ideal for this gourmet creation.
  • 2 teaspoons Dijon mustard Adds tanginess.
  • 3 oz Gruyere cheese, shredded Creates a luxurious texture.
  • 3 oz fontina cheese, shredded Amplifies the flavor.
  • 2 tablespoons unsalted butter, softened For buttering the bread.

Instructions
 

Cooking the Mushrooms

  • In a large skillet, heat the olive oil and 1 tablespoon of unsalted butter over medium-high heat.
  • Add the sliced cremini mushrooms and cook for 8-10 minutes, stirring occasionally until browned.
  • Stir in the minced garlic, fresh thyme, salt, and black pepper and cook for about a minute.
  • Finish with fresh lemon juice, then set the sautéed mushrooms aside.

Assembling the Sandwiches

  • Wipe out the skillet and butter one side of each slice of sourdough bread.
  • Flip two slices, spreading the unbuttered sides with Dijon mustard.
  • Divide half of the shredded Gruyere and fontina cheeses over the mustard sides, followed by a layer of sautéed mushrooms.
  • Top with the remaining cheese and close the sandwiches with the other slices of bread.

Cooking the Sandwiches

  • Return the sandwiches to the skillet over medium-low heat.
  • Cook for 3-4 minutes on each side until golden brown and cheese has melted.
  • Allow the sandwiches to rest for a minute before slicing and serving warm.

Notes

Serve with a side of warm tomato soup or salad. Let the skillet preheat adequately, and avoid overcrowding the pan for best results.
