Grilled California Avocado Chicken

Ingredients
  

For the chicken

  • 4 pieces boneless, skinless chicken breasts Plump and tender
  • 2 tablespoons olive oil Rich and aromatic
  • 1 teaspoon garlic powder For a hint of savory goodness
  • 1 teaspoon smoked paprika Adding a deep, smoky flavor
  • 1/2 teaspoon sea salt To enhance natural flavors
  • 1/2 teaspoon black pepper For a bit of warmth
  • 1/2 teaspoon chili powder Bringing a slight kick

For the toppings

  • 1 piece ripe avocado Sliced, creamy and buttery
  • 1 cup cherry tomatoes Halved, bright with juiciness
  • 1 cup shredded Monterey Jack cheese Melting beautifully
  • 2 tablespoons fresh cilantro Chopped, for a burst of freshness
  • 1/2 piece lime Juice for a zesty finish

Instructions
 

Preparation

  • Preheat your grill to medium-high heat, around 400°F (200°C). Lightly oil the grill grates to prevent sticking.
  • In a small bowl, combine the olive oil, garlic powder, smoked paprika, salt, pepper, and chili powder. Mix well.
  • Brush the chicken breasts evenly with the seasoned oil mixture on both sides.

Grilling

  • Place the chicken on the grill and cook for about 5–6 minutes on each side until fully cooked, checking for an internal temperature of 165°F (75°C).
  • During the last 2 minutes of grilling, top each chicken breast with shredded Monterey Jack cheese and close the grill lid.

Serving

  • Remove the chicken from the grill and let it rest for 5 minutes.
  • Top each chicken breast with slices of avocado, halved cherry tomatoes, and fresh cilantro. Finish with lime juice.

Notes

For best results, marinate the chicken if time allows. Avoid overcooking to keep the chicken juicy.
