Preparation

  • In a large pot or Dutch oven, heat the olive oil over medium heat.
  • Add the beef stew meat, browning each piece on all sides, then remove and set aside.
  • In the same pot, add the chopped onion and minced garlic, sautéing for 2-3 minutes.
  • Return the browned beef to the pot with the beef broth, carrots, potatoes, celery, thyme, bay leaf, salt, and pepper.
  • Bring the stew to a gentle boil, then reduce to low and cover.

Cooking

  • Let the stew simmer for 1 to 1.5 hours, stirring occasionally.
  • For a thicker stew, mix cornstarch with cold water and stir it into the pot, cooking for an additional 5 minutes.
  • 5 minutes before serving, fold in the frozen peas.
  • Remove the bay leaf before serving.

Notes

Store leftovers in the fridge for up to 3 days; stew tastes even better the next day. This recipe can also be adjusted for vegetarian variations or to include different vegetables.
