Instructions
 

Preparation

  • Rinse the rice in a fine-mesh strainer until the water runs mostly clear. Set aside to drain.
  • Heat the olive oil in a Dutch oven or deep skillet over medium-high heat. Add ground beef and cook for 7-9 minutes, breaking into small crumbles.
  • Add diced onion, bell pepper, celery, and a pinch of salt. Cook for 5-6 minutes until the vegetables soften.
  • Stir in garlic, tomato paste, Cajun seasoning, smoked paprika, thyme, cayenne, and black pepper. Cook for 1 minute.
  • Add the rinsed rice, beef broth, and bay leaf. Bring to a boil and stir. Cover tightly, reduce heat to low, and let simmer for 18-20 minutes.
  • Once cooked, turn off heat and let rest covered for an additional 10 minutes. Remove bay leaf and fluff rice with a fork. Stir in green onions and parsley.

Notes

For optimal results, rinse rice thoroughly, avoid overcooking vegetables, and allow resting time after cooking. Adjust seasoning to taste.
