  • to taste salt and pepper Adjust to preference.
  • 2 tablespoons olive oil For sautéing.
  • 1 tablespoon tomato paste For depth of flavor.
  • 1 bay leaf For aromatic flavor.

Preparation

  • In a large pot, heat the olive oil over medium heat.
  • Add the ground beef to the pot and cook until browned, breaking it into small pieces.
  • Remove excess fat from the beef.
  • Add chopped onions and minced garlic to the pot; sauté until the onion softens, about 3-4 minutes.
  • Stir in the tomato paste, dried thyme, and bay leaf; cook for an additional 2 minutes.
  • Pour in the chicken broth and bring to a gentle simmer.
  • Add chopped cabbage, diced potatoes, and sliced carrot; stir to combine and season with salt and pepper.
  • Let the soup simmer on low heat for 30-40 minutes or until the vegetables are tender.
  • Remove the bay leaf before serving.

Notes

Soup often tastes better the next day. Store leftovers in an airtight container.
