  • Add carrots, celery, potatoes, and zucchini to the pot, stirring to combine.
  • Pour in diced tomatoes, kidney beans, corn, and beef broth. Stir in dried thyme, oregano, salt, and pepper.
  • Bring the soup to a boil, then reduce heat and let it simmer for 25-30 minutes, until vegetables are tender.
