Instructions
 

Preparation

  • Combine fresh or frozen raspberries, granulated sugar, lemon juice, and cornstarch slurry in a saucepan. Cook over medium heat for about 5 to 7 minutes until the mixture thickens. Let it cool to room temperature.
  • Melt the white chocolate chips in a microwave-safe bowl or over a double boiler, stirring in 20-second intervals until smooth. Allow it to cool slightly.
  • In a separate bowl, whip the heavy cream with vanilla extract until soft peaks form.
  • Gently fold the melted white chocolate into the whipped cream until combined.

Assembly

  • In serving glasses, layer a spoonful of the raspberry mixture at the bottom, followed by a layer of the white chocolate mousse. Repeat the layers until the glasses are full.
  • Chill the parfaits in the refrigerator for at least 30 minutes before serving.
