Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) to ensure a perfect bake.
  • In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly moistened.
  • Press the graham cracker mixture firmly into the bottom of a 9-inch springform pan.
  • In a large mixing bowl, beat the cream cheese with granulated sugar using an electric mixer until smooth and creamy.
  • Add the eggs one at a time, blending well after each addition.
  • Stir in the vanilla extract.
  • Gently fold in the drained crushed pineapple.
  • Pour the cheesecake mixture over the prepared crust, smoothing the top.
  • Bake for 50-60 minutes, or until the center is set but still slightly jiggles.
  • Let cool completely at room temperature.
  • Once cooled, sprinkle the top with toasted coconut and chopped pecans.
  • Drizzle with melted white chocolate.
  • Chill in the refrigerator for at least 4 hours before serving.

Notes

Prepping a day in advance allows the flavors to meld beautifully. Avoid overmixing to prevent cracks during baking.
