Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Combine the chicken thighs with olive oil, thyme, rosemary, garlic, salt, and pepper, rubbing the mixture into the chicken.
  • Place the chicken in a roasting pan and cook for 35-40 minutes until golden brown and crispy.

Making the Gravy

  • In a skillet over medium heat, melt the butter, then whisk in flour if using.
  • Slowly pour in the chicken broth, stirring to avoid lumps, then add the cream and simmer until thickened.
  • Season with salt and pepper to taste.

Mashed Potatoes

  • In a large pot, boil the cubed potatoes until soft, about 15-20 minutes.
  • Drain and return to the pot, adding butter, milk, and salt; mash until fluffy.

Glazed Carrots

  • Sauté the carrots in olive oil or butter over medium heat, adding honey or brown sugar and a pinch of salt.
  • Cook until tender and caramelized.

Serving
