  • 1 lb lean turkey breakfast sausage savory and flavorful
  • 1 ts olive oil if needed
  • 1 red bell pepper, diced fresh and aromatic
  • 1/2 medium yellow onion, diced sweet and pungent
  • 2 cups baby spinach, roughly chopped tender and vibrant
  • 1 cup canned black beans, rinsed and well drained earthy and filling
  • 8 large eggs light and fluffy
  • 1 cup liquid egg whites silky and smooth
  • 3/4 cup cottage cheese creamy and rich
  • 1/2 ts kosher salt warming
  • 1/4 ts black pepper spicy and aromatic
  • 8 large high-protein burrito-size flour tortillas soft and chewy
  • 1 cup shredded cheddar cheese sharp and melty
  • 1/4 cup chopped fresh cilantro optional, fresh and fragrant
  • Salsa, avocado, or Greek yogurt for serving

Instructions
 

Cooking the Filling

  • Brown the turkey breakfast sausage in a large nonstick skillet over medium heat, breaking it into small crumbles until no pink remains (about 5 to 7 minutes). Transfer to a plate.
  • If the skillet looks dry, add the olive oil. Add the diced bell pepper and onion to the skillet, and sauté for about 4 to 5 minutes until softened.
  • Stir in the baby spinach and black beans, cooking until the spinach wilts.
  • In a separate bowl, whisk together the eggs, egg whites, cottage cheese, kosher salt, and black pepper until mostly smooth.
  • Lower the heat to medium-low and pour the egg mixture into the skillet with the vegetables, stirring gently for about 4 to 6 minutes until just set.
  • Fold the cooked turkey sausage back into the mixture.

Assembling the Burritos

  • Spread the filling out on a sheet pan to cool for about 10 minutes.
  • Warm the flour tortillas until pliable, then divide the filling evenly among them.
  • Sprinkle shredded cheddar cheese on top of each portion, then fold in the sides and roll from the bottom snugly. Place seam side down.

Finishing Touches

  • Toast each burrito seam side down in a dry skillet for 1 to 2 minutes per side until golden brown.
  • If preparing for later, wrap cooled burritos tightly to refrigerate or freeze.

Notes

For a lighter version, substitute turkey sausage with tofu or egg whites, or swap cheese for a vegan alternative. Serve with salsa, avocado, or Greek yogurt.
