Homemade Soft Cheese Onion Bread

Ingredients
  

For the Dough

  • 215 ml whole milk, warmed to 95-105°F for perfect dough texture
  • 12 g honey adds a hint of sweetness
  • 7 g instant yeast for leavening
  • 1 large egg, beaten for richness
  • 450 g all-purpose flour plus more as needed for kneading
  • 35 g unsalted butter, softened for mouthfeel
  • 8 g fine salt for flavor enhancement

For the Cheese Filling

  • 225 g young Gouda, Havarti, or mild cheddar, grated for melty surprise
  • 100 g cream cheese spread or plain cheese spread for a creamy filling

For the Onion Topping

  • 75 g yellow onion, thinly sliced for aromatic kick
  • 200 g grated cheddar, mozzarella, or a mix for gooey texture
  • 1 large egg, beaten for egg wash

Instructions
 

Preparation

  • Stir the warm milk, honey, and yeast together in a large bowl. Let it sit for 5 minutes until frothy.
  • Mix in the beaten egg.
  • Add flour, softened butter, and salt. Knead for 10-12 minutes until smooth and elastic.
  • Transfer the dough to a greased bowl, cover, and let rise in a warm spot until doubled, about 1 hour.

Cheese Filling Preparation

  • Mix grated young cheese with cream cheese spread until creamy.
  • Toss sliced onion with the grated topping cheese.

Shaping

  • Punch down the risen dough and divide into 6 equal pieces.
  • Flatten each piece into a 5-inch round and spoon cheesy filling in the center.
  • Pull edges over filling and pinch to seal. Place seam-side down on a baking sheet.

Final Rise and Baking

  • Brush each with beaten egg and sprinkle onion-cheese topping. Let rise again until puffy, about 25-35 minutes.
  • Preheat oven to 400°F (200°C) and bake for 16-20 minutes until golden brown.
  • Cool for 5-10 minutes before serving.

Notes

Use whole wheat flour for added nutrients. Avoid rushing the rising process for best results.
