Lemon Cake Layer

Blueberry Filling

  • 1 1/2 cups fresh or frozen blueberries bursting with flavor
  • 2 tbsp sugar to sweeten blueberry filling
  • 1 tbsp lemon juice enhances fruity flavor
  • 1 tsp cornstarch mixed with 1 tsp water for thickening

Frosting

  • 1 cup heavy whipping cream for a fluffy texture
  • 8 oz cream cheese, softened for smoothness
  • 1/2 cup powdered sugar for sweetness
  • 1 tsp vanilla extract to complement the frosting

Instructions
 

Preparation

  • Preheat your oven to 325°F (163°C) and line a springform pan with parchment paper.
  • In a mixing bowl, beat together the softened cream cheese, sugar, eggs, and vanilla extract until smooth.
  • Pour the cheesecake batter into the prepared springform pan and bake for 40 to 45 minutes, until edges are set.
  • Allow the cheesecake to cool completely.

Lemon Cake Preparation

  • Prepare the lemon cake mix according to package directions, adding the zest of one lemon.
  • Pour the batter into two 8-inch cake pans and bake for 25 to 30 minutes until golden brown.
  • Let the cake layers cool completely on a wire rack.

Blueberry Filling Preparation

  • In a small saucepan, combine the blueberries, 2 tbsp of sugar, and lemon juice.
  • Cook over medium heat until bubbly; stir in the cornstarch slurry and cook until thickened.
  • Remove from heat and let cool.

Frosting Preparation

  • Whip the heavy cream until stiff peaks form.
  • In another bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  • Gently fold the whipped cream into the cream cheese mixture.

Assembly

  • Start with one lemon cake layer, spread a layer of cheesecake, top with blueberry filling, and add the second cake layer.
  • Frost the entire cake with the creamy frosting.
  • Chill for at least one hour before serving.
