Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, mix the graham cracker crumbs, sugar, and melted butter until combined. Press this mixture into the bottom of a greased 9x9-inch baking pan.
  • Bake for 10 minutes and let it cool.

Making the Filling

  • In another bowl, beat together Greek yogurt, cream cheese, and sugar until smooth.
  • Add eggs, lemon juice, and lemon zest; mix until well combined.

Baking

  • Pour the cheesecake filling over the cooled crust and bake for 25-30 minutes until the center is set.
  • Allow the cheesecake to cool in the pan, then spread the lemon curd on top.
  • Chill in the refrigerator for at least 2 hours before cutting into bars.

For optimal success, have all ingredients at room temperature. Prep your baking pan with grease or parchment. Let the bars chill for at least 2 hours before cutting.
