Preparation

  • Preheat the oven to 325°F (160°C).
  • In a bowl, mix finely ground pistachios with melted butter. Press the mixture into the bottom of a springform pan to form the crust.
  • In a large bowl, beat cream cheese and sugar together until smooth and creamy.
  • Add eggs one at a time, beating well after each addition. Mix in the vanilla extract, lemon zest, and lemon juice.
  • Gently fold in the raspberries, taking care not to break them.
  • Pour the cheesecake filling into the prepared pistachio crust.

Baking

  • Bake for 50-60 minutes, or until the center is set but slightly jiggly.
  • Remove from the oven and let cool completely before removing it from the springform pan.
  • Chill in the refrigerator for at least 4 hours, but overnight is best for optimum flavor.

Serving

  • Top with whipped cream and extra raspberries before serving, if desired.
