Instructions
 

Preparation of the Crust

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, combine crushed vanilla wafer cookies and melted butter until well mixed.
  • Press the mixture firmly into the bottom of a 9-inch springform pan to form a stable crust.
  • Bake for 10 minutes and allow it to cool.

Preparation of the Filling

  • In a large mixing bowl, beat the softened cream cheese until smooth.
  • Gradually add the granulated sugar and flour, mixing until fully incorporated.
  • Add eggs one at a time, beating well after each addition.
  • Pour in the mango puree, vanilla extract, and a pinch of salt, mixing until the mixture is homogeneous.

Bake the Cheesecake

  • Pour the filling over the cooled crust, spreading it out evenly.
  • Bake for 50-60 minutes, until the center is set but not overcooked.
  • Let it cool at room temperature for about 15 minutes.

Preparation of the Topping

  • Mix the remaining mango puree with sugar and lemon juice.
  • Sprinkle the gelatin over the mixture and let it sit for 5 minutes.
  • Heat the mixture in the microwave for about 20-30 seconds until the gelatin dissolves.

Assembly of the Cheesecake

  • Pour the mango topping over the cooled cheesecake, spreading it evenly.
  • Refrigerate for at least 4 hours to chill completely.

Serving

  • Slice the cheesecake into pieces and serve chilled.
