Instructions
 

Preparation

  • Preheat your oven to 400°F and line a baking sheet with parchment paper.
  • Place the salmon fillets skin-side down on the lined baking sheet and season with salt, pepper, and lemon juice.
  • Spoon basil pesto over each fillet.
  • Top each salmon fillet with spinach, sun-dried tomatoes, red onion, and feta cheese. Drizzle with olive oil.

Cooking

  • Bake in the preheated oven for 15–18 minutes, until the salmon flakes easily with a fork.
  • Garnish with fresh herbs if desired and serve with rice, couscous, or roasted veggies.

Notes
