Preparation

  • Preheat your oven to 350°F (175°C) and prepare your 12-cavity mini bundt pan by coating it thoroughly with baking spray.
  • In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger until evenly mixed.
  • In a larger bowl, whisk together oil, brown sugar, granulated sugar, eggs, buttermilk, and vanilla until smooth and slightly thickened.
  • Gently add the dry mixture to the wet ingredients, folding just until combined. Do not overmix.
  • Fold in finely grated carrots and chopped walnuts, incorporating them carefully.
  • Divide the batter evenly among the prepared cavities, filling each about three-quarters full.

Baking

  • Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean.

Frosting
