Preparation

  • Mix the graham cracker crumbs, granulated sugar, and melted butter in a bowl until combined.
  • Press the mixture firmly into the bottom of small cups or mini cheesecake molds.
  • In another bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth.
  • Gently fold in the diced strawberries.
  • Spoon the cream cheese mixture over the prepared crust in the cups, filling them almost to the top.
  • Chill the mini cheesecakes in the refrigerator for at least 2 hours to allow them to set.
  • Serve chilled, drizzled with strawberry sauce if desired.
